Andes Mint Cookies

Our Sunday School classes’ Christmas party was a few weeks ago and I was looking for the perfect dessert to bring to the party. I scoured through my dessert Pinterest board looking for a recipe that I hadn’t made before, and that was different but also easy.
I came across these Andes Mint Cookies from Six Sister’s Stuff and decided this was the one to make and I am so glad I did! Everyone seemed to like them at the party and the next day when I ate a few that were left over I decided that they tasted even BETTER! How is that even possible? Not sure, but believe me it’s true!
Andes Mint Cookies
Ingredients:
- 1 Devil’s Food Cake Mix
- 1/2 cup of oil
- 2 eggs
- 1 package of Andes Mints
How to Make:
1. Mix everything except the Andes Mints together in a bowl.
2. Drop spoonfuls of dough onto baking sheet and bake at 350 degrees for about 8 minutes. Don’t bake any longer than 9 minutes though or they will be overdone.
3. Take the cookies out of the oven and while they are still hot place one Andes Mint on top of each cookie.
4. Set the timer for 5 minutes and the mint will be melted. Use a spoon and smooth out each mint over the cookie like frosting. Let cool and enjoy!

Every since I was little, I’ve been obsessed with Andes mints. Maybe because they are my dad’s favorites too?? Anyway, thanks for sharing these; I’ll definitely be making them for Christmas! And if you like these, I had Silk’s Chocolate Mint drink the other day, and if it wasn’t the closest thing to ThinMints in a drink!
