While I may not have a food blog, I do enjoy posting recipes here and I love cooking. In another life, I think I would enjoy becoming a chef or creating recipes. I chose Home Chef for several reasons. I liked how easy it was to set up an account and get a Meal Delivery, and I liked that it included healthy, yet delicious options. Once I tried it out, however, I was extremely impressed with how it all works.

When you create an account, you can set up your taste selections and dietary requirements. Some of the options include Seafood, Beef, Poultry, Pork, Lamb, Vegetarian, Dairy-Free, Soy-Free, Nut-Free, Gluten-Free, Low Calorie, Breakfast, and more! You can also decide how many meals per week you want, or you can select shipments every other week or every four weeks. Meals can be anywhere from 2-8 servings depending on your family needs.

When my meal kits arrived, I was surprised to see everything that came with it and how it was packed. The best thing about this meal delivery service is that you don’t have to be home to receive it. The box has special padding and packing to keep it from spoiling and the recipe for each meal will tell you within how many days you will need to cook it before it will go bad.

In my first box, I received Home Chef cookbook to keep my recipes in and two separate meal kit bags with all the ingredients pre-measured and ready to refrigerate or cook at my convenience. I was impressed with the quality of the ingredients that were sent and the freshness of everything included.

I love that Home Chef is a cheaper option for those who don’t want to grocery shop and meal plan, plus with pre-measured ingredients, you’re not stuck with any extra or wasted food! Here’s the recipe for the first meal I was sent, it was one of the best dishes I’ve ever had.

Rotisseri-Style Chicken From Home Chef

Ingredients

  • 1 Shallot
  • 5 oz. Broccoli
  • 2½ tsp. Rotisserie Chicken Seasoning
  • 1 oz. Cheese and Garlic Croutons
  • 2 Bone-in Skin-On Chicken Breasts
  • Âź cups Parboiled White Rice
  • 3 fl. oz. Heavy Whipping Cream
  • 3 oz. Cheddar Cheese Slices
  • 2 tsp. Chicken Demi-Glace
  • Olive Oil
  • Salt

Instructions

  1. Place prepared baking sheet into oven to preheat. Peel and slice shallot into very thin rounds. Cut broccoli florets into bite-sized pieces. In a small bowl, make seasoned oil by combining 2 tsp. seasoning blend (reserve remaining for sauce) with 1 Tbsp. olive oil. Crush croutons into coarse crumbs. Rinse chicken and pat dry.
  2. Carefully remove baking sheet from oven. Spray baking sheet with cooking spray and place chicken on it, skin side down. Brush half the seasoned oil (reserve remaining for skin side) on chicken. Place on bottom rack of oven and bake until chicken is lightly browned and reaches a minimum internal temperature of 165 degrees, 16-20 minutes. Remove from oven, flip chicken, and turn broiler on high. While chicken cooks, cook broccoli rice.
  3. Place a small pot over medium heat. Add 1 tsp. olive oil and shallots to hot pot. Cook until slightly softened, 2 minutes. Add rice and ž cup water to pot. Bring to a boil. Reduce to simmer, cover, and cook until rice is tender, 12-15 minutes. Stir in cream and ? cup water. Increase heat to medium-high and bring to a boil. Add broccoli and cook, stirring occasionally, until tender, 3-4 minutes. Remove from burner and season with Ÿ tsp. salt. Tear cheddar slices into large pieces and stir into pot until melted.
  4. Place chicken under broiler until skin is crispy and browned, 2-3 minutes. Remove from broiler, brush remaining seasoned oil on skin side of chicken, and rest 2-3 minutes. Replace foil on baking sheet. Add cheese and broccoli mixture to prepared casserole dish (or two individual small casserole dishes). Sprinkle crushed croutons on top. Set on prepared baking sheet and place under broiler until golden brown, 1-2 minutes.
  5. Place a medium pan over medium-high heat. Add Âź cup water, remaining seasoning blend, demi-glaze, and any accumulated juices from resting chicken. Bring to a boil and reduce by half, 2-4 minutes.
  6. Serve chicken on plate with sauce and cheddar broccoli rice.
